Hello Dears, and here we are again, ready to welcome the day with yet another recipe that hopefully brings both comfort, joy and ease. First, I should point out that usually most potato soups really are just a glorified potato and cream which makes a good hearty side soup for lunch. You will find some that maybe have a little ham in them and those are good as well. This one, however, has bacon in it. As you can probably tell by now, Peg Bracken’s recipes are not very vegan-friendly. I am sure there were vegans in Peg’s day but she was not one. My family isn’t either, although we do like our vegetables and rounding out a meal from all of the food groups. If anyone is reading this and thinks they can make some changes to be vegan-friendly I would welcome reading about your soup changes. Always feel free to make changes as you desire for flavor, diet, and so forth.

Another thing I have noticed is that there seem to have been a lot of frozen soups in Peg’s day as well. I haven’t looked for frozen soup and had to wonder: do they still make it? Well, after making this recipe I looked it up and sure enough, there are still some frozen soups out there. Just as there are still jars of chipped beef. See, the thing is that before cooking this I figured that using the condensed soup would work (in as much as the existence of frozen soup was still in question) and it actually did work out very well. In this recipe anyway. If you can find the frozen potato soup do that, otherwise just stick to the condensed soups. Can there be a difference in flavor? Maybe. I do not know. I stuck with what I know.

As I stated before what I really liked about this soup was the bacon. And I know what you’re thinking I mean just soup for dinner, is that going to be enough? I assure you it will be good enough to be filling for a family dinner. Of course, if you want you can always double or triple the recipe. Especially if it is for a potluck soup dinner thing you might get invited to.

So without further ado:


Heidelberg Soup                                                                     

Ingredients                                              3-4 Servings                           

  • 2 cans potato soup

  • 5 slices bacon

  • 4 slices salami

  • 12 green onions chopped

  • black pepper

  • parsley

  • milk for the potato soup

                                                                                                                           

Directions:                                                             

Brown the bacon. Combine that with all the other ingredients into a big pot and let it simmer.   Remember to follow the directions on the condensed soup or frozen soup and add the milk as the directions advise.  You can skip the salami and go all bacon, but I liked the salami with this.


Now as I stated before it doesn’t seem like it is a suitable dinner, but it really is great on a cold day, rainy day, or even a summer day when you don’t want to heat up the house with cooking something in the oven. Cook up some cornbread and you really have a winner. You could even grate up some cheese and offer that as a sprinkling over the soup, but you don’t have to, it’s fine as it is.

 

I had to make a lot of it for my large family and there was enough for the growing teens to have seconds, well for everyone to have more. This was a really nice Idea and I am thankful for it. This would also be a great quick meal to make up when you glance at the clock and realize “Oops, I forgot dinner."

Even if you are a from scratch type person if you are crunched for time a few on hand staples will not hurt, like a cornbread mix or condensed soups.
